Some of my favorite game soundtracks:
Cubixx HD - the best I've heard by far! Some great dubstep/electronic songs.
Mercury HG - electronic/dance (really fun, but can get distracting when playing certain levels lol)
Wipeout HD - classic fun electronic music (one of my first favorites)
Shatter - this is another cool soundtrack with airy electronic beats
Groovin Blocks - also very upbeat with some fun, quirky songs

That's a tough question
Katamari Demacy is quirky and unique love the songs from that game
Dragon Quest Symohonic Collection is awesome (although this covers the soundtracks for 1-7)
Final Fantasy 4 Celtic Moon was an awesome arrangement of that game's songs
Chrono Trigger - Till the End of Time (again classical arrangement of the soundtrack, also biased toward this one, as it's my alltime favourite game)
but overall favourite Original SoundTrack version would probably have to be:
Final Fantasy 6 OST (3 cds of music that I can and will listen to over and over)

Uncharted has a really good soundtrack, I mean it fits perfectly to the environment in which the game resides.

Dynasty Warriors rock music is pretty beast too.. even if alot of people complain and reviewers harp on how stupid it is. >:F

Tony Hawk's Pro Skater 1 and 3
GTA III, Vice City, San Andreas (the best soundtrack ever) and IV
PES 2008, the music was awful and cheesier than well, cheese but 'go to the goal' 'football!' and 'missin u' are classics in the 'so bad it's awesome' category.
Burnout 3 Takedown
LittleBig Planet had a truly unique soundtrack,that you now hear on nearly everything on T.V.
As for game music/scores
Skyrim is subtle with it's score but uses it effectively
Metal Gear Solid 1,2,3,4 and Peace Walker, 60% of my Mp3 player is taken up with the music of these games
Devil May Cry had music that just made me want to twat things with a ruddy great sword, that's a good thing by the way.
Heavy Rain, Ethan Mars Main Theme is a stirring peice of music that goes brilliantly with the feel of the game.
Uncharted 3 may not have improved upon 2 in many ways but the score was one of them.
Streets Of Rage 2, i have all the music from this, it's still great to listen to even today, 'Never Return Alive' is good stuff
God Of War nailed it with it's score, made the game feel a bit more hollywood.
Resident Evil 2 had a score that still drifts in and out of my head to this day, due mainly to the many times i heard it whilst playing.
Sonic The Hedgehog 1 and 2, awesome stuff, i hear any of it and i know which stage it's from instantly.
There are many more but that's an example of my favourite favourites.

There's really only 2 games Ive played where the music stood out for me....
1. Skyrim, the music became like a part of the game. I found myself really being motivated by the accompanying tunes.
2. Brutal Legend, hands down one of the best soundtracks ever. You know its good when my kids are asking me to hunt down the albums just so we can have the songs on hand whenever we want to hear them.
